Daun Pakis - Sayuran Lezat Kaya Kalsium dan Vitamin A

Mengulas bahan pangan khas Indonesia memang tidak ada habisnya. Salah satu sayuran yang sering digunakan sebagai bahan masakan adalah daun pakis ( Peteridium aquilinum). Biasanya pucuk daun muda yang digunakan sebagai bahan baku masakan. Setelah dimasak, tekstur daun pakis lembut mirip asparagus dan rasa yang lezat.

Daun pakis sebagai bahan pangan ternyata cukup populer di dunia kuliner. Selain Indonesia, negara Asia lain seperti Malaysia, Cina, Thailand, Vietnam dan Jepang ternyata juga banyak menggunakan daun pakis sebagai bahan masakan.  Pakis merupakan tanaman keluarga paku-pakuan, termasuk jenis tanaman terna dengan rizoma yang menjalar di tanah. Tanaman ini berkembang biak dengan spora. Jika masih muda, pucuk daun pakis bisa diolah menjadi masakan. Di Indonesia, olahan daun pakis cukup populer, terutama di dapur Sumatera. Masyarakat Sumatera biasanya mengolah daun pakis menjadi gulai daun pakis.

Dilihat dari tekstur yang lembut dan rasa daun yang lezat. Daun pakis bisa diolah menjadi masakan seperti opor daun pakis, sayur bobor daun pakis, ditumis maupun diolah menjadi isi sup. Gunakan daun pakis muda yang teksturnya lunak. Daun pakis tua teksturnya liat sehingga kurang cocok diolah menjadi masakan. Memasak daun pakis sebaiknya  jangan terlalu lama atau dimasukkan sesaat sebelum masakan diangkat.  Memasak daun pakis terlalu lama akan membuat warna daun berubah menjadi kehitaman, dan tekstur terlalu lunak sehingga dari sisi tampilan kurang menarik.

Dari sisi nutrisi, daun pakis juga cukup bergizi. Setiap 100 g daun pakis mengandung energi 39 kkal, protein 4.5 g, lemak 0.4 g, karbohidrat 6.9 g, serat 2 g, kalsium 136 mg, fosfor 159 mg, besi 2.3 mg, vitamin C 2.5 mg dan karoten 3292 ug. Di tilik dari kandungan gizinya, daun pakis termasuk sayuran yang sangat bergizi. Kandungan kalsiumnya ternyata setara dengan kandungan susu sapi segar yang setiap 100 g-nya mengandung 143 mg, bahkan kandungan fosfor di dalam daun pakis jauh lebih tinggi dibandingkan susu sapi yang hanya mengandung 60 mg. Jenise's Tattoo is Decorative and Practical

Normally I would have prefaced this as a "Tattoos I Know" post, since the contributor, Jenise, has been a friend of mine since 1984. However, since we haven't actually seen each other in person in over twenty-five years, I've never actually met her tattooed self in the flesh.

Nonetheless, Jenise has been a fan and supporter of Tattoosday since its inception and has, from early on, told me that "one of these days" she'd send me shots of the tattoo circling her right wrist. Imagine my surprise when, out of the blue, the pictures finally arrived this week. So here it is:

Jenise credits Clay at Willie's Tropical Tattoo in Daytona Beach, who inked these in February 2008. The piece was "designed to reflect [her] Hawaiian bracelet and it took [the artist] 2 hours to get it just the way he wanted it before he put the stencil on...".  As for the words "Peanut" and "Shellfish," the tattoo also acts as a quasi medic alert bracelet, indicating two foods which make her seriously ill. So there's a practical aspect to the piece, as well.

On a humorous note, she added "NO... these are NOT the nicknames of my children, I have been asked that more times than I can count".

Kapulaga - Rempah Wangi Berkhasiat Obat

Kapulaga  (Amomum compactum)  merupakan rempah dari buah tanaman suku jahe-jahean (Zingiberaceae). Buahnya menggerombol di sekitar permukaan pangkal batang. Buah yang disebut orang bule cardamom ini memiliki aroma  wangi yang  khas, rasa agak pedas, pahit  dengan efek sedikit ‘semriwing’ seperti senyawa mentol.

Dalam dunia kuliner kapulaga digunakan sebagai bumbu masakan maupun campuran minuman, khususnya minuman hangat. India, Pakistan, Banglades, Sirlanka, dan negara Timur Tengah adalah negara yang ‘royal’ menggunakan kapulaga dalam masakan. Mereka biasanya menggunakannya sebagai campuran bumbu kari, masakan daging, ayam atau ikan. Di Indonesai, Masyarakat Aceh dan Sumatera juga sering menggunakan kapulaga sebagai campuran bumbu masakan gulai, kari dan kalio. Sedangkan masyarakat Jakarta biasanya menggunakan bumbu ini sebagai campuran bumbu soto betawi. 

Varietas kapulaga banyak ragamnya, seperti kapulaga lokal yang berkulit putih dan kapulaga  India yang berkulit hijau. Di pasaran, kapulaga biasanya dijual dalam bentuk utuh dan bubuk. Penggunaanya sekitar 4-8 buah kapulaga untuk membuat 2 liter kari/kuah masakan.  Selain sebagai bumbu masak, kapulaga juga sering digunakan sebagai bahan baku jamu.  Biji kapulaga mengandung minyak esensial seperti cineol. Buah Segar Khas Ramadan

Di Bulan Ramadan banyak makanan, minuman dan buah khas Ramadan yang di pasarkan. Diantaranya aneka buah-buahan segar seperti Timun Suri, Kurma, Blewah dan Kolang-kaling. Mari kita cermati apa nutrisi esensial buah khas ramadan dan manfaatnya bagi kesehatan tubuh.

Setelah seharian menahan lapar dan haus, mengawali buka puasa dengan minuman segar berbahan buah-buahan tentu sehat dan menyegarkan. Di dalam buah-buahan mengandung karbohidrat komplek dan gula buah (fruktosa). Nutrisi ini dapat memulihkan energi setelah tubuh kekurangan energi karena berpuasa. Buah-buahan juga mengandung karbohidrat komplek yang dicerna perlahan-lahan selama berpuasa. Serat yang tinggi di dalam buah akan memberi rasa kenyang lebih lama sehingga rasa lapar bisa ditekan selama berpuaasa. Sebagian besar buah juga mengandung banyak air dan mineral yang dapat mengganti ion tubuh yang hilang selama berpuasa. Berikut buah-buah khas Ramadan ditilik dari sisi nutrisi.

Blewah (Cucumis melo cantalupensis)

Buah ini masih kerabat dekat buah melon. Melon memiliki cita rasa yang segar dan mengandung banyak air. Selain sebagai campuran es buah, blewah juga bisa diolah menjadi jus.

Blewah memiliki kandungan fruktosa dan glukosa, gula buah sederhana yang cepat diserap tubuh sehingga bisa memberikan energi instan. Kalsium di dalam blewah termasuk tinggi, demikian juga dengan  kandungan vitamin A. Baik untuk menjaga kesehatan tulang dan mata.

Betakaroten di dalam blewah bersifat antioksidan, manfaatnya melindungi tubuh dari radikal bebas penyebab kanker. Sedangkan vitamin C di dalam blewah berfungsi sebagai anti bakteri dan anti virus, bermanfaat meningkatkan setamina sehingga tubuh tidak mudah terserang penyakit. Sementara tingginya kalium di dalam blewah mampu mengendalikan tekanan darah, cocok bagi penderitaa hipertensi. Sementara serat yang tinggi mencegah tubuh dari serangan kanker kolon. Blewah juga memiliki indeks glikemik yang rendah, aman dikonsumsi bagi penderita diabetes dan obesitas.

Setiap 100 g blewah mengandung, energi 34 kkal, protein 0.84 g, serat 0.9 g, gula 7,86 g, kalsium 9 mg, vitamin C 36,7 mg, vitamin A 3.382 IU dan vitamin E 0.05 mg.

Timun Suri (Cucumis sativus)

Termasuk keluarga labu labuan atau Cucurbitaceae, buah timun suri memiliki tekstur yang mudah rusak ketika matang, beraroma harum dan daging buah bercita rasa manis. Cocok sebagai bahan baku minuman seperti es buah atau jus.

Timun suri banyak mengandung air, baik dikonsumsi untuk mengembalikan cairan tubuh. Serat di dalam timun suri mampu mencegah timbulnya kanker saluran pencernaan, seperti kanker usus dan kolon. Ini karena sifatnya serat mengikat zat-zat karsinogen penyebab kanker yang ada di saluran pencernaan.

Kolang-Kaling  (Arenga pinnata)

Kolang kaling atau yang sering disebut sebagai Buah Atap adalah biji buah dari Pohon Aren. Setelah diproses dan dimasak, akan dihasilkan biji kolang-kaling berwarna putih, kenyal dan segar. Cocok sebagai bahan baku minuam, es atau campuran isi kolak.

Ditilik dari sisi nutrisi, kolang kaling kaya akan serat dan mineral. Setiap 100 g kolang-kaling mengandung energi 27 kkal, protein 0,4 g, lemak 0,2 g, karbohidrat 6 g, serat 1,6 g, kalsium 91 mg, fosfor 243 mg dan zat besi 0,5 mg. Tingginya kandungan mineral seperti kalsium, besi dan fosfor akan menjaga tubuh tetap bugar dan sehat selama berpuasa.

Perlu dicermati dalam memilih kolang-kaling adalah, pilih yang masih segar, biasanya ditandai buah tidak berlendir, rasa netral dan aroma tidak asam. Buah kolang-kaling segar lebih disarankan dibandingkan dengan manisan kolang-kaling yang sudah ditambahkan gula dan pewarna. Mengingat bahaya bahan pewarna makanan yang disinyalir menjadi karsinogen penyebab kanker, karenannya pilih kolang-kaling yang berwarna putih alami.

Buah Kurma (Phoenik dactylifera)

Buah kurma memiliki kandungan kalori tinggi dan mudah dicerna, kondisi ini menjadikannya cocok dikonsumsi seteleh berpuasa. Manfaat istimewa lain kurma adalah adanya zat aktif kalium dan salisilat. Zat ini dapat dipercaya dapat mengurangi risiko serangan stroke, menurunkan demam dan menghilangkan rasa sakit.

Selain karbohidrat dalam bentuk gula dan pati, buah kurma juga mengandung beragam vitamin dan mineral penting yang bermanfaat untuk tubuh. Dalam setiap 100 gr kurma terkandung vitamin A 50 IU, tiamin 0,09 mg, ribovlafin 0,10 mg, niasin 2,20 mg dan kalium 666 mg. Sedangkan mineral penting terkandung adalah magnesium, potassium, dan kalsium.

Menurut penelitian dr Anwar EL Mufti dari Mesir, kurma mengandung 70 % zat gula(fruktosa). Zat gula ini tidak berbahaya bagi kesehatan karena sudah diolah secara alami. Seperti gula buah pada umumnya, fruktosa mudah dicerna dan diserap oleh tubuh. Miguel's Vision Reveals What Lies Within

A few weeks back, I popped in at my wife's workplace, and she introduced me to Miguel, the husband of one of her colleagues. In warmer weather, she had seen that Miguel had a tattoo, and she thought I would be interested in talking to him about it. Unfortunately, at the moment, it was in the high 20's outside and Miguel had on layers of clothing, which covered the artwork on his upper right arm. I did, however, ask him to send me a photo when he got the chance.

Miguel was good to his word and e-mailed me the following photo:

Miguel told me that, one night, a couple of years ago, during a difficult time in his life, he had a dream about the tattoo and, when he awoke, he drew up the image he had seen in his mind. The vision, to him, "represents the evil that people have inside". He took the idea to Sunset Tattoo in Brooklyn, and one of the artists  created the piece.

Jenny's Skeleton Key

January was a bleak month here in New York City. The second snowiest month ever did not bode well for inkspotting, but on the last day of the month, I met Jenny, a graphic designer, at my local bookstore.

Jenny had two tattoos visible, but has nine others as well. She offered up this cool skeleton key tattoo on her inner left forearm:

She told me that the tattoo's orientation on her arm is, if you'll pardon the pun, key. It points toward her heart and represents the fact that she makes her own decisions in her life, or in her own words, "I open my own doors".

She had this done by Mumia at Omega Tattoos in Queens. She added that all her tattoos are in black and gray, saying it is a matter of personal preference and that colors don't translate well on her skin.

Masakan Padang Favorit

Masakan tradisional Indonesia banyak ragamnya. Seperti masakan Padang yang populer hingga ke mancanegara. Selain Rendang, Lauk Gadang, Sate Padang, Soto Padang, Sayur Kapau dan Ketupat Minang, masih ada hidangan sayuran khas Padang yang lezat dan menggugah selera. Seperti Gulai Rebung. Gulai Rebung

Bahan:

700 g rebung muda, potong-potong

1.5 lt santan dari 1 ½  butir kelapa

4 sdm minyak goreng

Bumbu:

10 butir bawang merah, haluskan

4 siung bawang putih, haluskan

6 buah cabai merah keriting, haluskan

4 cm kunyit, bakar,  haluskan

6 butir kemiri, haluskan

3 potong asam kandis/1 sdm air asam jawa

2 batang serai, memarkan

3 lembar daun jeruk

2 lembar daun kunyit

1 sdt garam halus

Cara Membuat:

1.      Panaskan minyak, tumis semua bumbu halus hingga harum. Tambahkan daun jeruk, daun kunyit, serai, asam kandis dan garam, aduk rata.

2.      Tuang santan dan rebung, masak sambil diaduk-aduk hingga matang dan kuah agak mengental. Angkat.

3.      Tuang gulai rebung ke dalam mangkuk saji. Hidangkan.

Untuk 7 Porsi

Tip: Rebung bisa diganti dengan nangka muda dan menjadi gulai nangka muda. Saat memasak gulai sebaiknya sering diaduk-aduk agar santan tidak pecah.

200 g tahu, potong dadu

150 g kailan, potong-potong

100 g paprika merah, potong dadu

2 sdm saus tiram

1 sdt minyak wijen

100 ml air

2 sdm minyak goreng

Bumbu:

60 g bawang bombay, potong korek api

Cara Membuat:

1. Panaskan minyak, tumis bawang bombay dan bawang putih hingga harum. Masukkan potongan tahu, saus tiram dan minyak wijen. Masak hingga tahu berubah warna.

2. Masukkan gula pasir, garam dan air, aduk rata. Masak hingga air mendidih. Tambahkan paprika dan kailan. Masak hingga semua bahan matang. Angkat. Tuang ke dalam pinggan saji. Hidangkan.

Untuk 3 Porsi

Tip: Kailan bisa diganti dengan caisim, brokoli, bayam atau kacang panjang.

Rilke On the Flesh

It's February 1, which means we are only two months away from the start of a new edition of The Tattooed Poets Project, and I have begun assembling the first posts for this annual extravaganza.

What better way to acknowledge this looming event, but to post a poetic tattoo?

The following piece is one that I spotted at the end of last summer on Penn Plaza. Belonging to a young lady named Rosa, it has been one of my few remaining 2010 leftovers:

What I noticed first was not that this was a line of verse, but that it was placed on the body in an unusual way. Most lines of poetry, when manifested on flesh, are on the arms and wrist, or the lower legs and occasionally a back. This tattoo runs from the front of to her back, vertically climbing and descending from her shoulder.

The line is in German, and represents a piece from Rainier Maria Rilke's Duino Elegies.

Ein jeder Engel ist schrecklich

Or, in context:

Who, if I cried out, would hear me among the angels’
Hierarchies? and even if one of them pressed me
suddenly against his heart: I would be consumed
in that overwhelming existence. For beauty is nothing
but the beginning of terror, which we still are just able to endure,
and we are so awed because it serenely disdains
to annihilate us. Every angel is terrifying.

 Those are the opening lines of the first elegy, translated by Stephen Mitchell.

Rosa didn't give me much insight as to why she had the line tattooed, but it is quite a powerful statement.

When I asked her who the artists was, she replied only that it was someone in Brooklyn that went under the name "The Milk Maid". This sounded familiar at the time, but I couldn't quite put my finger on it. Of course, I came to be reminded that The Milk Maid is the moniker of Joy Rumore, at Twelve 28 Tattoo, quite a wonderful artist, whose work has appeared previously on Tattoosday here.

"First Taste" Art Show at Bound for Glory Tomorrow Night!

In case you're wondering where I'll be on Friday night, the plan is for me to attend the opening of Bound for Glory's first art show.

Now, I'm not a big fan of Staten Island (nothing against the people, just my least fave borough), but the fact that the show is curated by Friend of Tattoosday, Magie Serpica, makes it worth the effort. Magie originally appeared on Tattoosday here.

"First Taste"

This is our first art show at Bound For Glory! It will feature the art of many awesome local Staten Island artists, as well as select works from some tattooers nationwide.

The art will be for sale and a portion of the proceeds will go towards Project Hospitality, a local charity which feeds the hungry, shelters the homeless and cares for people with HIV/AIDS.

...The opening reception will be on Friday Jan 28th at 8pm. There will be refreshments, which will be generously donated by local businesses such as Starbucks, Jeans Fine Wine & Spirits, and The CupCake Bar NYC.

Everyone is invited!

Tattoorism: Sean Returns, Part 2

Last week, I shared more of reader Sean's vast tat-alog here. It's time to finish off our inventory of this very generous fan o' the site. Let's see what we have:

...I got a clipper ship on my upper arm.  The ship is navigating through a background of clouds and lightning bolts and has a banner underneath reading “Hope.”  Its meaning follows the same idea behind my anchor tattoo.  Hope is a huge part of having a positive mental attitude, which I try (sometimes with little luck, of course) to hold at all times.  It’s a reminder that you can make it through stormy parts of your life, no matter how bad they get.  It’s also done in the traditional style I love so much.  The tattoo was done by Mike Schweigert at Electric Tattoo in Bradley Beach, NJ.

While attending [the 2010] Philadelphia Tattoo Arts Convention, I decided to get a tattoo to commemorate my first convention.  For as many years as tattoos have been a part of my life, this was my first convention...I got a blue rose with a candle spouting out of it in between my sparrows and flower on my outer elbow. 

I’m a firm believer in everyone having a different reasoning for getting tattoos.  Some are used as place markers in one’s life, some are used to remember an event, some have deep profound meanings and some are just aesthetically pleasing. I could probably come up with some in depth meaning behind the tattoo, but in the end, I got it to commemorate my first tattoo convention and that’s pretty much the only reason.  Done by Rocco at Death or Glory Tattoos in Westbrook, Maine.

Finally, I got my outer elbow to forearm done with a snake coiling through a skull and dagger and impaling itself on the dagger’s blade.  

I usually try to go out of my way to ensure that my friends/family/other people in general are happy, more often than I would like to admit, putting their happiness before my well-being.  This tattoo serves as a reminder for me not to do that so much, and to focus on myself sometimes.  The snake can be viewed as a protection figure, coiling around and through the rest of the tattoo, but has also caused injury to itself by doing so.  Basically, its my reminder that as much as I would like to help others, I need to keep my own happiness and well being in mind before I choose which action to take or I’ll end up injuring myself in the process.  Done by Mike Schweigert at Electric Tattoo in Bradley Beach, NJ.

Malam tadi tidak telat tidur, seharusnya pagi ini aku terbangun cepat, karena mau melakukan rutinitas harian, cuaca begitu dingin sehingga selimut tebal menyelimuti sekujur badan, mungkin itu yang membuatku nyenyak.


Sejak malam tadi Payakumbuh diguyur hujan, udara terasa dingin, sedingin hatiku yang lagi beku, beku karena sikapmu yang membisu.

So winter makes me consider desperate measures. As I've trickled down to two or three posts a week (believe me, it hurts me more than it hurts you), I've occasionally toyed with the idea of reporting on other things in the tattoo community, other than the Bill-o-centric encounters I have in the City That Never Sleeps. I've even gone so far as to write a few posts and then never published them. The reality is, however, I am facing a scarcity of inkspotting occurrences, and I'm just going with the flow.

So, here we go.....

I recently got an email from someone representing a Guide to Art Schools website, listing Tattoosday among the top 45 tattoo blogs. Considering how specific the site is, I'm honored to be included, especially among some of my favorite tattoo cyber-destinations. You check out the list here:

And since we're throwing around the work "Best, " I received word about a  new tattoo reality show currently in production for the Oxygen Network. Its working title is "Best Ink" and it sounds rather compelling. Check it out:

And, finally, in a creepy news story, but one that certainly nipped at my curiosity, the artists at Sacred Art Tattoo Studio in Tucson are getting some publicity, as they had the dubious distinction of tattooing Jared Loughner last fall. Not to feed into the media frenzy surrounding this guy, but I was curious, so I just had to look into it. Read all about it here.

Tattoos I Know: Paul's Taíno Ink

Last summer, my friend Paul had some new work done by Pierre at The Fort Apache Tattoo Studio near Penn Station. You can see some of his old work here and here and here and here (yes, he's a regular!).

Fort Apache is up several flights of stairs, but it is conveniently close to my day job, which makes up for the aerobic ascension to the shop on 31st Street.

This is what Paul had tattooed on his right forearm:

These four symbols are petroglyphs from the Taíno culture in Puerto Rico. They are one way Paul has chosen to acknowledging his and his ancestors' culture, in ink.

From top to bottom, the symbols each have literal meanings, and then personal meanings for Paul. The triangular piece is a zemis, pointing in three directions - to the sky and the Creator, to the underworld and the realm of the dead, and to the world of the living.

The second petroglyph is Sol, or the sun and the fourth design is the coqui, or frog.

Niki's Memorial Foot

Alas, with winter setting in, spotting tattoos in public is seasonably challenging. Thank goodness for ink on uncovered extremities, like hands and the occasional foot!

Case in point, earlier this month I met Niki in Penn Station after spotting this dagger on her foot:

She had this, one of her three tattoos, done three or four years ago a couple of years after her father had passed away.

It is a memorial that is based on a necklace her dad wore. When I asked her, after the fact, if she still had the necklace, she said she didn't, but said it was a lot like this one. She added "my dad bought it the Christmas before he passed away and it really showed off his sarcasm and style because he was very much into motorcycles and whatnot".

Wisely, in my opinion, she kept the design, but excised the words on the necklace from the tattoo!
